Breakfast Casserole
shredded cheese, 1 lb sausage, pancake batter, 9×9 pyrex dish
Cover sides an bottom of pyrex dish with butter (margarine)
Brown entire pound of sausage, keep the pieces small, drain very well. I put mine on a double paper towel to get out as much grease as possible.
Cover bottom of pyrex dish with shredded cheese
Put sausage over cheese
If you use a pancake mix make it using a cup of cup and a half of the mix. Pour it over the sausage. I don’t stir it but I shift the sausage around so the pancake mix gets down to the cheese.
Bake in 350 degree oven until the the mix is brown on top. Check to make sure it’s done with a toothpick.
Serve with syrup or just plain.
At PF Chang’s tonight, I had some Mr. Chew’s Asian Beaver, wrapped in lettuce. Delish!
