Anyways, in the interest of expanding my cooking repertoire, I decided to try a new recipe tonight. I made a spinach lasagna, nothing new there, but instead of just getting a bagged salad mix to go with it, I decided to take advantage of the lasagna’s hour of baking time to actually prepare a vegetable medley side dish. Quite a while ago, I had been perusing one of the Best of Bridge cookbooks my aunt gave me when I moved out on my own, and had flagged a few recipes that I thought were interesting, but many I never got around to actually trying out. For tonight, I decided to give Green Beans Guido a try.

Now, the recipe calls for one 10 oz. package of frozen green beans. I thought this was sort of curious. Certainly, it was a choice made on the basis of convenience – frozen beans can be bought well in advance, and are more likely to be just kicking around in the freezer ready for use at any time. Frozen beans are okay, but fresh green beans just taste so much better – they have that fresh crispness to them, but it’s not just texture, you can actually taste a difference. In the interest of giving this dish its best possible shot, I opted to swap out frozen for fresh.

I discovered, however, that there is more than just handiness to the choice of frozen over fresh here. First off, there’s far more prep work involved with fresh green beans. You have to wash them, which is a pain, especially when you’re being stubborn like me and refusing to use the colander to wash them because you don’t want to wash the colander later. Silly reason, but there it was. After they’re washed, then you need to cut them into bite size pieces, which has to be done with small collections of beans – you can’t grab a big handful and just hack away. It took me nearly 15 minutes just to get the beans ready for cooking!

In the end, the dish was quite tasty. I enjoyed it, I really savoured that fresh crispness in the beans. Next time, though, I’m going to have to give it a really hard think before I decide whether or not to take the frozen route…. Laziness will probably win!!!

    Even though one has to wash the colander,it saves so..much time in washing the fine fresh green specimens it’s worth it! Did you eat all..that by your self? Or were you planning to invite your favorite readers over to dine with you? :-)
