I was going to post this a few hours ago – right before bed, but my computer died on me…. every time I clicked the start menu, it hung!!!! Eitherway, enjoy the ALS Lesbians!
Anyways, I was telling a friend about my cooking problems, and a friend suggested a double boiler to melt the chocolate for dipping licorice into. I would, except I don’t have one. ^_^ I do remember using the double boiler in my junior high and high school cooking classes, it’s just I have no memory of being told why. ^_^ Anyway, we’ll see how I can mimic the effects of a double boiler without an actual double boiler.
I’ve also decided that I’m a big fan of slightly dried out marshmallows. ^_^ You know those cookies you can buy that are a layer of cookie with some jam layered on top, and marshmallow on top of that, all covered in chocolate? Well, I like those okay. I bought some on major clearance a while back – some special limited edition for the holidays ones with chocolate cookie, cherry jam, and dark chocolate coating. Very nice. ^_^ But, I inadvertently left the package open overnight. For a few nights… Anyway, I plucked one out today, and bit into it – and it was amazing. The marshmallow was chewier, and felt like it had more substance to it – less like I was chomping down on sweet fluff. ^_^
So I guess the take home message is that I will be opening my packets of marshmallow cookies a few days in advance before I actually want to eat them. ^_^ Unless I intend to share with others. I’m not sure everyone will be as big a fan of the chewiness as I am. ^_^

double boiler? just take a bowl (a good one is a metal mixing bowl) and set it on top of your pot with an inch or two of boiling water in it. if it’s larger than the pot, should work fine. just make sure not to have the bowl touching the boiling water, otherwise it kind of defeats the purpose of the double boiler.
Yeah, actually just put the chocolate in a stainless steel bowl and then hold it above a pot of boiling water. Just watch the chocolate melt. Perfect!!!
